Ingredients

  • 1 plumb chicken
  • 1/2 cup butter
  • 1 crushed garlic clove
  • 2 cups rice
  • 1/2 teaspoon saffron
  • 4 cups hot chicken stock
  • 2 lobsters
  • 24 shelled shrimp
  • 24 mussels
  • 2 chorizo sausages sliced

Instructions

  1. Cut the plumb chicken into serving pieces.
  2. Saute the chicken pieces in butter with a crushed garlic clove until golden brown on all sides.
  3. Remove the chicken and set aside.
  4. In the remaining pan juices, add rice and saute until golden.
  5. Add saffron to the rice.
  6. Pour in hot chicken stock.
  7. Cook over a very low flame until all the liquid is absorbed and the rice is partly cooked.

Tips & Substitutions

For a richer flavor, consider substituting olive oil for butter when sautéing the chicken. If saffron is unavailable, a pinch of turmeric can add color and a different flavor profile. To enhance the dish, add a splash of white wine after sautéing the garlic. Use short-grain rice like Bomba for the best texture, as it absorbs liquid well, ensuring a perfect paella.

Serving Suggestions

Serve your Paella Valenciana directly from the pan for a rustic presentation. Pair it with a fresh green salad and crusty bread to complement the rich flavors. A chilled Spanish white wine or a refreshing sangria makes an excellent beverage pairing. For an added touch, garnish with fresh parsley or lemon wedges before serving.

Storage & Reheating

Leftover paella can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of chicken stock or water to prevent drying out, and warm it gently on the stove over low heat. Avoid reheating in the microwave, as it can lead to uneven heating and a mushy texture.

Frequently Asked Questions

Can I use other types of seafood in this paella?

Absolutely! While traditional Paella Valenciana features specific seafood, feel free to incorporate other favorites like clams, crab, or even fish. Just ensure the cooking times are adjusted accordingly to prevent overcooking the proteins.

Is it necessary to use saffron in this recipe?

Saffron provides a unique flavor and color that is characteristic of authentic paella. However, if you’re looking for a substitute, a combination of turmeric and paprika can mimic the color, though the flavor will differ slightly. Experiment to see what works best for you.

Can I make this paella vegetarian?

Yes, you can create a delicious vegetarian paella by omitting the meat and seafood. Use an array of vegetables like bell peppers, artichokes, peas, and green beans, and replace the chicken stock with vegetable stock for a flavorful base.
