Ingredients

  • 4 oz. Italian sausage links
  • 2 (19 oz.) cans ready-to-serve minestrone soup
  • 8 oz. tomato sauce
  • 2 tsp. dried crushed thyme leaves
  • 8 oz. small to medium peeled and deveined shrimp
  • 1/2 tsp. garlic powder
  • 8 oz. boneless, skinless chicken breasts
  • 1 1/4 c. uncooked quick cooking rice

Instructions

  1. In a large saucepan, brown sausage links and cut into 1/4-inch slices.
  2. Add minestrone soup, tomato sauce, thyme, and garlic powder; bring to a boil.
  3. Reduce heat and simmer, covered, for 3 minutes.
  4. Add shrimp and chicken to the mixture.
  5. Simmer, covered, until shrimp are pink and chicken is cooked through, about 5 minutes.
  6. Stir in uncooked rice.
  7. Remove from heat.
  8. Cover and let stand until almost all the liquid is absorbed.
  9. Serve in bowls.
