Ingredients

  • 1/4 cup olive or salad oil
  • 2 tablespoons butter
  • 8 large all-purpose potatoes
  • 1 small red pepper
  • 1 small green pepper
  • 1/2 cup green onions
  • 1 clove garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped parsley
  • 1/4 c. chopped parsley

Instructions

  1. In a large, heavy skillet, over medium-high heat, heat the oil and butter.
  2. Add enough potatoes to make a single layer in the skillet. Cook, turning occasionally, until golden brown, about 10 minutes.
  3. Transfer the browned potatoes to a boil or a dish of boiling water.
  4. Repeat with remaining potatoes until all are browned.
  5. In the same skillet, add the chopped red and green peppers, green onions, and minced garlic. Cook until vegetables are tender.
  6. Add salt and pepper to taste.
  7. Sprinkle chopped parsley over the cooked potatoes and vegetables before serving.
