Ingredients

  • 2 to 2 1/2 lb. fryer chicken, disjointed
  • salt and pepper to taste
  • 1 large onion, sliced
  • 4 Tbsp. margarine
  • 1 1/2 tsp. Hungarian paprika
  • 1 large tomato, sliced
  • 1 bell pepper, sliced
  • 1/4 lb. mushrooms, sliced
  • 1/2 cup sour cream

Instructions

  1. In a Dutch oven, sauté sliced onions until translucent in margarine.
  2. Remove onions with a slotted spoon and set aside.
  3. In the remaining pan juices, brown the chicken well on all sides.
  4. Return the onions to the pan, stir in the paprika, half of the sliced bell peppers, and half of the sliced tomatoes.
  5. Cover and simmer for 15 minutes.
  6. Turn the chicken pieces over; add sliced mushrooms and cook, covered, until chicken is tender, approximately 10 to 15 minutes.
  7. Transfer the cooked chicken to a serving dish and keep warm.
  8. Stir sour cream into the Dutch oven; add a little water if necessary to make a pan gravy.
  9. Add additional seasoning if necessary, then pour the sauce over the chicken.
  10. Garnish with remaining sliced tomatoes and bell pepper slices.
