Ingredients

  • 1 egg white
  • 1 cup castor sugar
  • 2 tablespoons boiling water
  • 2 tablespoons corn flour
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1 teaspoon vinegar

Instructions

  1. Beat together the egg white, castor sugar, vanilla, and vinegar for 2 minutes.
  2. Add boiling water; beat for 12 minutes.
  3. Gently fold in the baking powder and cornflour; do not beat.
  4. Pile on a foiled, covered tray.
  5. Bake for 1 1/2 hours in a very slow oven (250°F).
