- In a large crock-pot, add tomato sauce, stewed tomatoes, and finely grated zucchini and set to high.
- Chop the red onion and bell pepper.
- Rinse the sliced mushrooms and sauté them in a large skillet with butter, stirring until cooked.
- Drain the sautéed mushrooms and add them to the crock-pot.
- Add minced garlic, oregano, salt, and pepper to taste to the crock-pot.
- Sauté the lean ground beef or turkey until fully cooked, then drain any excess fat.
- Add the cooked meat to the crock-pot.
- Stir everything together, cover, and turn the crock-pot to low. Let simmer for 1 to 4 hours.
- Meanwhile, bring a large pot of water to a boil and cook spaghetti noodles for about 10 minutes until al dente.
- Serve the sauce over the cooked spaghetti, and enjoy with salad and garlic French bread.
