Parolini Spaghetti

Ingredients

  • 1 red onion
  • 1 bell pepper
  • 2 pkg. sliced fresh mushrooms
  • 2 cans tomato sauce
  • 1 can stewed tomatoes
  • 2 to 4 cloves fresh garlic
  • 1 1/2 lb. lean ground beef or turkey
  • 1 zucchini
  • dash of oregano
  • salt
  • pepper
  • 2 tsp. butter
  • 1 can tomato paste

Instructions

  1. In a large crock-pot, add tomato sauce, stewed tomatoes, and finely grated zucchini and set to high.
  2. Chop the red onion and bell pepper.
  3. Rinse the sliced mushrooms and sauté them in a large skillet with butter, stirring until cooked.
  4. Drain the sautéed mushrooms and add them to the crock-pot.
  5. Add minced garlic, oregano, salt, and pepper to taste to the crock-pot.
  6. Sauté the lean ground beef or turkey until fully cooked, then drain any excess fat.
  7. Add the cooked meat to the crock-pot.
  8. Stir everything together, cover, and turn the crock-pot to low. Let simmer for 1 to 4 hours.
  9. Meanwhile, bring a large pot of water to a boil and cook spaghetti noodles for about 10 minutes until al dente.
  10. Serve the sauce over the cooked spaghetti, and enjoy with salad and garlic French bread.
