Ingredients

  • 1 1/2 lb. red potatoes
  • 1 Tbsp. oil
  • 1 onion
  • 1 clove garlic
  • 1/4 tsp. garlic powder
  • 1 c. chicken broth
  • 1 c. fresh chopped parsley

Instructions

  1. Peel a strip of skin off of each potato in the middle.
  2. Place potatoes in cold water.
  3. Heat a large skillet over medium-high heat and add oil.
  4. Sauté chopped onion and garlic in the skillet for approximately 5 minutes.
  5. Add chicken broth and 3/4 cup of chopped parsley to the skillet; bring to a boil.
  6. Place the potatoes in a single layer in the skillet.
  7. Return to a boil.
  8. Reduce heat to simmer, covered, for 10 minutes or until potatoes are tender.
  9. Remove potatoes with a slotted spoon to a serving bowl.
  10. Add pepper to the skillet mixture and stir.
  11. Pour the skillet mixture over the potatoes.
  12. Sprinkle with the remaining chopped parsley before serving.
