  • 2-1/2 Yukon Gold Potatoes, peeled and cubed
  • 1-1/2 large parsnips, peeled and sliced 1/2 inch thick
  • 1 (14-1/2 oz) can reduced sodium chicken broth
  • 1-1/2 cups water
  • 1 tablespoon unsalted butter
  • 2 leeks, white part only, cleaned and chopped
  • 1/2 teaspoon thyme

Instructions
