  • 1 Tbsp salt
  • 1 Tbsp shoyu
  • 1/2-inch piece ginger, crushed
  • 2 bundles long rice, soaked in hot water
  • 1 can bamboo shoots, sliced thin
  • 6 dried mushrooms, soaked and sliced thin
  • 1 can sliced water chestnuts
  • green onion

Instructions

  1. Saute the chicken in oil until lightly browned.
  2. Add water and crushed ginger; cook until chicken is tender.
  3. Add sliced mushrooms, bamboo shoots, and sliced water chestnuts.
  4. Season with salt and shoyu (soy sauce).
  5. Add soaked and cut long rice noodles; cook for 10 minutes.
  6. Garnish with chopped green onion and serve.
