Ingredients

  • 1 Tbsp. olive or vegetable oil
  • 2/3 c. chopped onion
  • 1 (4 oz.) jar mushroom pieces
  • 1/2 c. Italian bread crumbs
  • 1/2 c. plain yogurt
  • 1/8 tsp. black pepper
  • 10 refrigerated flaky biscuits
  • sour cream (optional)
  • 1 small clove garlic, minced
  • 1 (9 oz.) pkg. frozen chopped spinach

Instructions

  1. Lightly grease 20 miniature muffin cups.
  2. Heat olive oil in a large skillet.
  3. Saute chopped onion and minced garlic until tender.
  4. Add drained chopped spinach, mushroom pieces, bread crumbs, plain yogurt, salt, and black pepper; blend well.
  5. Separate refrigerated flaky biscuits into 10 pieces, then split each into 2 layers.
  6. Place each biscuit layer in a greased muffin cup and press firmly into the bottom and up the sides.
  7. Spoon a generous tablespoon of spinach mixture into each muffin cup.
  8. Bake at 375°F for 15 to 20 minutes or until golden brown.
  9. Garnish each with sour cream, if desired.
  10. Serve warm.
