Party Spinach Cups
Mini spinach cups packed with tender spinach, mushrooms, and cheesy bread crumbs, perfect for parties or appetizers, appealing to cheese lovers and vegetable fans alike.

- Lightly grease 20 miniature muffin cups.
- Heat olive oil in a large skillet.
- Saute chopped onion and minced garlic until tender.
- Add drained chopped spinach, mushroom pieces, bread crumbs, plain yogurt, salt, and black pepper; blend well.
- Separate refrigerated flaky biscuits into 10 pieces, then split each into 2 layers.
- Place each biscuit layer in a greased muffin cup and press firmly into the bottom and up the sides.
- Spoon a generous tablespoon of spinach mixture into each muffin cup.
- Bake at 375°F for 15 to 20 minutes or until golden brown.
- Garnish each with sour cream, if desired.
- Serve warm.
