Ingredients

  • 3 lb. boneless pork, cut into chunks
  • 6 c. water
  • 5 c. hominy (half yellow, half white)
  • 1 c. chopped onion
  • 1 tsp. garlic powder
  • 2 tsp. leaf oregano
  • 3 red chile pods or 3 Tbsp. chili powder
  • 1 1/2 to 2 tsp. salt

Instructions

  1. Place pork and water in a saucepan and cook, covered, until meat is tender (about 1 hour).
  2. Drain the hominy.
  3. Add the hominy, chopped onion, garlic powder, leaf oregano, red chile pods or chili powder, and salt to the cooked pork.
  4. Taste and adjust salt as needed.
  5. Serve hot.
