  • 4 large diced onions
  • 2 large red bell peppers
  • 2 large green bell peppers
  • 2 Tbsp. salt
  • 5 c. sugar
  • 2 Tbsp. celery seed
  • 1 qt. vinegar

Instructions

  1. Cook all ingredients in a galvanized pan or kettle until tender and transparent.
  2. Thicken, if desired.
  3. Turn off the heat.
  4. Pack in jars and seal.
  5. Do not need to process.
  6. Just be sure jars are clean and hot.

Tips & Substitutions

For optimal flavor, let the pickles sit for at least 24 hours before serving. If you prefer a spicier kick, consider adding red pepper flakes or jalapeños. Feel free to substitute white sugar with honey or agave syrup for a different sweetness profile. Ensure the cucumbers are firm and fresh for the best texture. Use a non-reactive pot instead of galvanized if you're concerned about metal leaching.

Serving Suggestions

These pickles are perfect as a tangy side dish or condiment for sandwiches and burgers. They pair beautifully with sandwiches like a classic Reuben or alongside BBQ dishes. For a refreshing twist, add them to salads or serve them with a cheese platter. They also make a great addition to a charcuterie board, complementing meats and cheeses well.

Storage & Reheating

Store the packed jars in a cool, dark place. Once opened, keep in the refrigerator where they can last for several weeks. To reheat, simply warm the pickles gently on the stove or in the microwave, but be careful not to overheat as it can alter their texture. They can also be enjoyed cold straight from the jar.
