Ingredients

  • 2 Tbsp. olive oil
  • 1 small onion, chopped
  • 6 sprigs parsley, cut
  • 1 can white beans
  • 1 small can tomato sauce
  • 1 1/2 c. water
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 lb. macaroni

Instructions

  1. In a saucepan, heat olive oil and sauté chopped onion without browning.
  2. Add parsley, tomato sauce, water, salt, and pepper. Let simmer for 1 hour.
  3. Add beans and simmer for an additional 10 minutes.
  4. Cook macaroni in boiling, salted water until al dente.
  5. Drain the macaroni and add it to the sauce mixture.
  6. Serve hot.
