Ingredients

  • 1 Tbsp. Knox gelatine
  • 1/4 c. cold water
  • 1/3 c. butter
  • 1 c. sugar
  • 2 egg yolks, beaten
  • 32 marshmallows, cut in small pieces
  • 4 c. sliced peaches
  • 2 egg whites, beaten
  • 2 c. vanilla wafers, crushed

Instructions

  1. Soak gelatine in 1/4 cup cold water for 5 minutes.
  2. Cream together butter and sugar; add beaten egg yolks.
  3. Cook over low heat until thoroughly thickened.
  4. Remove from heat and add soaked gelatin.
  5. When slightly cooled, add marshmallow pieces.
  6. Blend slightly and cool.
  7. Fold in sliced peaches and beaten egg whites.
  8. In a mold, alternate layers of crushed vanilla wafers and peach filling, beginning and ending with cookie crumbs.
  9. Chill until set.
  10. Serve with or without whipped cream.
