Ingredients

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (3 1/4 oz.) dry vanilla pudding mix
  • 3 tablespoons margarine
  • 1 egg
  • 1/2 cup milk
  • 15 to 20 ounces sliced peaches or pineapple chunks, drained
  • 1 (8 oz.) cream cheese, softened
  • 1/2 cup sugar
  • 3 tablespoons reserved peach or pineapple juice
  • 1 tablespoon sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, baking powder, and salt in a bowl.
  3. Combine the pudding mix, margarine, egg, and milk until smooth.
  4. Pour batter into a greased baking dish.
  5. Arrange sliced peaches or pineapple chunks over the batter.
  6. Beat softened cream cheese with sugar and reserved juice until smooth.
  7. Spoon cream cheese mixture over the fruit, leaving a 1-inch border.
  8. Mix sugar and cinnamon together and sprinkle over the cream cheese layer.
  9. Bake for 30 to 35 minutes until the crust is golden brown.
