Ingredients

  • 3/4 cup margarine
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon coconut flavoring (optional)
  • 24 maraschino cherries, halved and well drained

Instructions

  1. In a large mixing bowl, beat margarine with an electric mixer on medium to high speed about 30 seconds or until softened.
  2. Add about half of the flour, all of the sugar, egg yolk, vanilla, baking powder, and optional coconut flavoring to the margarine.
  3. Beat until combined, scraping sides of the bowl occasionally.
  4. Beat or stir in the remaining flour.
  5. Shape the dough into two 6-inch rolls.
  6. Wrap in waxed paper or plastic wrap.
  7. Chill for 2 to 24 hours.
  8. Cut the dough into 1/4 inch thick slices.
  9. Place slices 1 inch apart on an ungreased cookie sheet.
  10. Place a halved maraschino cherry on the bottom half of each slice for a bell clapper, then let the dough stand for 1 to 2 minutes to soften for easier handling.
  11. Fold in the sides of each slice, overlapping at the top and slightly covering the cherry.
  12. Pinch the sides to resemble a bell shape.
  13. Bake at 350°F (175°C) for 6 to 8 minutes or until edges are firm but not browned.
  14. Remove the cookies and cool on wire racks.
