Ingredients

  • 1/2 c. butter or margarine
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1/3 c. peanut butter
  • 1 c. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. oatmeal
  • 1 c. chocolate chips
  • 1/4 c. peanut butter
  • 1/2 c. powdered sugar

Instructions

  1. Preheat the oven and grease a baking dish.
  2. In a bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Beat in the egg and peanut butter until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing well.
  6. Stir in the oatmeal until evenly incorporated.
  7. Spread the mixture into the prepared baking dish and bake for 20-25 minutes until golden.
  8. Remove from the oven and sprinkle with 1 cup of chocolate chips, then spread the melted chips over the top.
  9. In a small bowl, combine the powdered sugar and peanut butter, then drizzle this mixture over the chocolate.
  10. Once cooled, cut into bars.
