Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon double-acting baking powder
  • 1 cup skim milk
  • 1/3 cup chunky peanut butter
  • 1/4 cup margarine
  • 1 egg
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 3-inch loaf pan with nonstick cooking spray; set aside.
  3. In a medium bowl, combine dry ingredients: flour, sugar, and baking powder; set aside.
  4. In another bowl, beat together the egg, milk, peanut butter, margarine, and vanilla extract until blended.
  5. Pour the wet ingredients into the dry ingredients and stir just until moistened.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45 to 50 minutes, until the loaf is golden and a cake tester inserted in the center comes out dry.
  8. Let the loaf cool in the pan on a wire rack for 5 minutes.
  9. Invert the loaf onto the wire rack and cool for 5 minutes.
  10. Remove the pan and let the loaf cool completely before slicing.
