Ingredients

  • 1 cup shortening
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 1 teaspoon baking soda
  • 3 1/2 cups flour, sifted
  • 1 cup buttermilk
  • 1 cup pear preserves
  • 1 cup pecans

Instructions

  1. Cream sugar and shortening until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Stir in vanilla, allspice, and gradually add sifted flour.
  4. Dissolve baking soda in buttermilk.
  5. Add the buttermilk mixture to the creamed ingredients, mixing well.
  6. Fold in pear preserves and chopped pecans.
  7. Pour batter into a greased tube pan.
  8. Bake at 325°F for 1 hour and 45 minutes, or until a toothpick inserted in the center comes out clean.
