Pecan Caramel Bars

Ingredients

  • 1 cup all-purpose flour + 2 tbsp
  • 1/2 tsp baking powder
  • 2/3 cup butter, 6 tbsp cubed
  • 1 None egg, lightly beaten
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 2 tbsp self-rising flour
  • 2 cups pecans, coarsely chopped

Instructions

  1. Preheat oven to 350°F. Grease and line a 12 x 8 inch rimmed baking tray. Sift flour and baking powder into a bowl. Cut in 6 tbsp cubed butter until mixture resembles coarse breadcrumbs. Add egg and mix to form a soft dough. Press into base of prepared pan. Bake for 15 mins.
  2. Meanwhile, to make caramel topping, melt remaining butter in a small saucepan. Remove from heat, add honey, brown sugar and self-rising flour. Stir until smooth. Arrange pecans over cooked base then pour caramel over top. Bake for another 15 mins. Let cool in pan. Slice and serve.
