Ingredients

  • 2/3 cup flour
  • 2/3 cup yellow cornmeal
  • 2/3 cup ground pecans
  • 1/2 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 beaten eggs
  • 1/2 cup sour milk
  • 1/3 cup margarine, melted
  • 1/3 cup chopped pecans

Instructions

  1. Line muffin tins with paper bake cups.
  2. In a bowl, stir together flour, cornmeal, ground pecans, sugar, baking powder, and baking soda.
  3. Make a well in the center of the dry ingredients.
  4. In a smaller bowl, mix eggs, sour milk, and melted margarine.
  5. Add the wet mixture to the dry ingredients and stir just until moist; batter should be lumpy.
  6. Gently fold in chopped pecans.
  7. Fill muffin cups three-quarters full.
  8. Bake in a 375°F oven for 18 to 20 minutes.
  9. Remove from oven and serve warm.
