Ingredients

  • 1/4 lb margarine
  • 1 cup quick Quaker oats
  • 1 1/4 cups boiling water
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 1/3 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions

  1. In a large bowl, combine oats, margarine, and boiling water.
  2. Stir until margarine is melted and mixture is well blended.
  3. Stir in both white sugar and brown sugar.
  4. Add the beaten eggs and mix well.
  5. Sift together flour, salt, baking soda, and cinnamon, then add to the wet mixture.
  6. Mix thoroughly until combined.
  7. Stir in vanilla extract.
  8. Pour batter into a greased and floured 13 x 9 x 2-inch pan.
  9. Bake at 350°F (175°C) for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
