Ingredients

  • 8 oz. vanilla wafers, crushed
  • 3/4 lb. confectioners sugar
  • 2 1/2 pt. whipped cream
  • 16 oz. can crushed pineapple
  • 4 oz. bottle maraschino cherries
  • 1/2 lb. butter
  • 4 egg yolks
  • 4 egg whites
  • 1 cup chopped nuts
  • 1 tsp. vanilla

Instructions

  1. Cream the butter and confectioners sugar together.
  2. Add egg yolks and vanilla, mixing well.
  3. Fold in stiffly beaten egg whites gently.
  4. Line a 14 x 16-inch pan with half of the crushed vanilla wafers as the crust.
  5. Spread the beaten mixture over this crust.
  6. Add a layer of crushed pineapple on top.
  7. Distribute chopped maraschino cherries evenly over the pineapple.
  8. Spread whipped cream evenly over the layers and sprinkle with chopped nuts.
  9. Add the remaining crushed wafers as the top crust.
  10. Chill the dessert for 12 hours before serving.
