Pecan stuffed acorn squash offers a delightful combination of sweet raisins, crunchy pecans, and savory stuffing, perfect for a cozy, elegant main or side dish for autumn gatherings.

Ingredients

  • 13 3/4 oz. can beef or chicken broth
  • 2 small acorn squash
  • 1/3 cup margarine
  • 2 cups dry herb seasoned stuffing mix
  • 2 oz. pkg. pecan pieces
  • 1/3 cup seedless raisins

Instructions

  1. Reserve 2/3 cup of the broth.
  2. Pour the remaining broth into a shallow baking dish.
  3. Place the squash halves, cut side down, in the broth and bake at 400°F for 25 to 35 minutes.
  4. In a medium saucepan, heat the reserved broth and margarine over medium heat until the margarine melts.
  5. Stir in the stuffing mix, pecan pieces, and seedless raisins.
  6. Turn the baked squash over so the cut side is up.
  7. Spoon the stuffing mixture into the squash cavities.
  8. Bake for an additional 20 minutes, basting with broth after 10 minutes, until the squash is tender.
