Peg'S Beef Stroganoff

Ingredients

  • 1 1/2 lb. top sirloin, cut into strips
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. butter
  • 1/2 c. dry sherry
  • 1/2 c. beef broth
  • 1 1/2 Tbsp. cornstarch
  • 1 c. sour cream
  • 1 Tbsp. Dijon mustard
  • 1 lb. mushrooms, sliced
  • 1 pkg. noodles

Instructions

  1. Heat oil in skillet.
  2. Add beef and set aside.
  3. Add butter to skillet.
  4. Add mushrooms and cook 5 minutes.
  5. Add sherry and boil 2 minutes.
  6. Add beef broth and cornstarch.
  7. Stir in sour cream.
  8. Add beef and heat 1 to 2 more minutes.
  9. Do not boil.
  10. Serve over noodles.
