Peppercorn Sauce

Ingredients

  • 2 Tbsp. butter
  • 1/4 c. shallots, finely chopped
  • 1/3 c. brandy
  • 1 c. beef broth
  • 1 c. heavy cream
  • 1 Tbsp. whole black peppercorns, crushed

Instructions

  1. Melt butter in a heavy medium saucepan over medium heat.
  2. Add shallots and sauté until golden.
  3. Add brandy and bring to a boil.
  4. Add beef broth and boil until mixture is reduced to 1 cup, about 5 minutes.
  5. Add heavy cream and crushed peppercorns; cook over medium heat until reduced to sauce consistency, about 5 minutes.
  6. Taste and season with additional crushed peppercorns and salt, if necessary.
  7. Can be prepared one day ahead, then cover and chill.
  8. Bring to a simmer before serving.
  9. Serve over your favorite cut of beef.
