Ingredients

  • 2 grouse or partridges or pair of rabbits
  • 1/2 lb. lean ham
  • 2 medium onions
  • 1 lb. lean beef
  • fried bread
  • butter
  • salt
  • 2 stalks celery, cut into 1-inch lengths
  • 3 qt. water

Instructions

  1. Joint the game neatly and set aside.
  2. Cut the ham and onions into small pieces and fry them in butter until lightly browned.
  3. Place the fried ham and onions into a soup pot with the beef, cut into strips, and add a little pepper.
  4. Pour water over the ingredients.
  5. Heat slowly and stew gently for 2 hours.
  6. Remove the pieces of game and cover them in a bowl.
  7. Continue cooking the soup for 1 hour longer, then strain and let it cool.
  8. Drop in the celery and simmer for 10 minutes.
  9. Pour the soup upon fried bread in the tureen.
