Ingredients

  • 3/4 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 2 ounces unsweetened chocolate
  • 2/3 cup butter
  • 2 cups sifted powdered sugar
  • 2 eggs, separated
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla
  • 1/2 gallon peppermint ice cream

Instructions

  1. Combine graham cracker crumbs and melted butter and press into the bottom of a 9x13-inch ungreased pan.
  2. Melt the unsweetened chocolate and butter together and let cool.
  3. In a bowl, add powdered sugar, egg yolks, chopped pecans, and vanilla to the cooled chocolate mixture and mix well.
  4. Beat the egg whites until stiff and fold them into the chocolate mixture.
  5. Pour the chocolate mixture over the graham cracker crust.
  6. Spread the peppermint ice cream over the chocolate layer and freeze until firm.
  7. Spread ice cream evenly and then drizzle chocolate sauce over the top.
  8. Freeze again until completely frozen before serving.
