Ingredients

  • pastry for 10-inch pie shell
  • 1 lb. bacon
  • 1 1/2 cups diced Swiss cheese
  • 4 eggs
  • 1 cup whipping cream
  • 1 cup half and half
  • 1 tablespoon all-purpose flour
  • 3/4 teaspoon salt
  • dash of pepper

Instructions

  1. Line a 10-inch quiche dish or pie pan with pastry.
  2. Trim excess pastry around edges.
  3. Bake at 400° for 3 minutes.
  4. Remove from oven and gently prick the pastry with a fork.
  5. Bake for an additional 5 minutes.
  6. Let cool on a rack.
  7. Fry bacon until crisp; drain.
  8. Crumble bacon and place in the pastry shell.
  9. Sprinkle with diced Swiss cheese.
  10. Combine eggs, whipping cream, half and half, flour, salt, and pepper, stirring well.
  11. Pour the mixture over the cheese in the pastry shell.
  12. Bake at 375° for 65 minutes or until set.
