Ingredients

  • 1 c. onion, chopped
  • 1 c. cooked brown rice
  • 1 c. low-salt tomatoes, chopped
  • 1/4 c. commercial pesto sauce
  • 16 oz. can red beans, drained

Instructions

  1. Saute chopped onion in a skillet sprayed with cooking spray until browned.
  2. Add cooked brown rice, chopped tomatoes, pesto sauce, and drained red beans to the skillet.
  3. Cook until everything is heated through.
