Ingredients

  • 4 1/2 lbs. ripe tomatoes
  • 3 mild green chilies
  • 1 large Spanish onion
  • 1 medium green pepper
  • 1 medium red pepper
  • 3-6 canned whole jalapeño peppers
  • 5 1/2 oz. tomato paste
  • 3/4 cup brown sugar
  • 1 tablespoon coarse pickling salt
  • 2 teaspoons paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Combine all ingredients in a large pot.
  2. Bring to a boil, then reduce heat to medium.
  3. Cook for 70 minutes, stirring occasionally, until the salsa thickens.
  4. Ladle into sterilized jars or containers and let cool before storing.
