Ingredients

  • 2 c. thinly sliced zucchini
  • 1 1/2 c. green beans, cut crosswise into halves
  • 1 1/2 c. thinly sliced onions
  • 1 large red pepper, thinly sliced
  • salt
  • 1 c. cider vinegar
  • 1 Tbsp. pickling spice
  • 1/2 c. NutraSweet Spoonful

Instructions

  1. Sprinkle zucchini, green beans, onions, and red pepper lightly with salt; let stand for 15 minutes.
  2. Rinse the vegetables well.
  3. Stir vegetables into boiling water to cover; cook uncovered for 2 minutes.
  4. Drain the vegetables and rinse with cold water.
