Ingredients

  • 3/4 c. fine bread crumbs
  • 1/2 c. milk
  • 1 lb. ground beef
  • 1 egg
  • 3/4 c. finely chopped onion
  • 2 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1 1/3 c. Minute rice
  • 1 can sliced pineapple
  • 1 green pepper
  • 1/4 c. catsup

Instructions

  1. Combine bread crumbs, milk, ground beef, egg, 1/4 cup of onion, and 1 1/2 teaspoons of salt.
  2. Gently form the mixture into 20 meatballs and brown them in butter in a large skillet.
  3. Add Minute rice and remaining onion to the skillet; stir gently until the rice is lightly browned.
  4. Drain the pineapple, measuring the syrup.
  5. Add water to the syrup to make 1 1/3 cups of liquid.
  6. Cut each pineapple slice into 6 wedges and gradually add them along with the liquid, 1 teaspoon of salt, and remaining ingredients to the rice mixture; stir thoroughly and bring to a boil.
  7. Reduce heat, cover, and simmer for 5 minutes.
