Ingredients

  • 2 eggs
  • 2 cups flour
  • 1 cup brown sugar
  • 1 cup chopped nuts
  • 1 (20 oz.) can crushed pineapple with juice
  • 1 cup white sugar
  • 2 teaspoons baking soda

Instructions

  1. Beat eggs until fluffy.
  2. Add crushed pineapple with juice to the eggs and mix well.
  3. In a separate bowl, combine flour, brown sugar, white sugar, and baking soda.
  4. Add the dry ingredients to the pineapple mixture and mix thoroughly.
  5. Fold in half of the chopped nuts into the batter.
  6. Pour the batter into a greased 9 x 13-inch baking pan.
  7. Bake at 350°F for 40 to 45 minutes until a toothpick inserted into the center comes out clean.
  8. Sprinkle remaining chopped nuts on top of the cake after baking if desired.
