Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups packed brown sugar
  • 1 egg
  • 2 1/2 cups flour
  • 1 teaspoon soda
  • 1 cup buttermilk
  • 1 cup milk
  • 1 tablespoon vinegar
  • 1 1/2 cups rhubarb, cut into 1/2-inch cubes
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts
  • 1/2 cup sugar

Instructions

  1. Mix the first nine ingredients: shortening, brown sugar, egg, flour, soda, buttermilk, rhubarb, vanilla, and chopped nuts.
  2. Pour the batter into a greased baking pan.
  3. Combine the sugar, cinnamon, and butter to make the crumb topping.
  4. Sprinkle the crumb mixture evenly over the batter.
  5. Bake at 325°F (160°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
