Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. baking soda
  • 2/3 c. pineapple juice
  • 2/3 c. bran
  • 1/2 c. walnuts, chopped
  • 1/2 c. crushed pineapple
  • 1 egg, beaten
  • 2 Tbsp. melted shortening

Instructions

  1. Sift dry ingredients together.
  2. Pour pineapple juice over bran and let stand for 15 minutes.
  3. Add chopped walnuts, crushed pineapple, beaten egg, and melted shortening.
  4. Add sifted dry ingredients to the wet mixture.
  5. Mix until blended.
