Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup crushed pineapple (not drained)
  • 2 tablespoons melted butter
  • 1 egg
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Sift together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, stir the undrained crushed pineapple into the melted butter and egg.
  3. Add the dry ingredients to the pineapple mixture.
  4. Stir quickly until all ingredients are moistened.
  5. Fold in the grated Cheddar cheese.
  6. Pour the batter into a greased pan.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Let the bread stand overnight before slicing and serving.
