Ingredients

  • 3 whole chicken breasts
  • 1 tsp salt
  • 1/4 cup onion, chopped
  • 1/4 cup margarine
  • 1 green pepper, sliced
  • 1/2 cup cashews, chopped
  • 1 tsp curry
  • 1/4 tsp nutmeg
  • 1 (20 oz) can pineapple chunks
  • 1/2 cup water
  • 1 chicken bouillon cube
  • 1 Tbsp cornstarch

Instructions

  1. Bone and slice the chicken breasts.
  2. Melt margarine in a large skillet over medium heat.
  3. Add chicken strips; sprinkle with salt and cook, stirring constantly, for 3 minutes.
  4. Add chopped onion, sliced green pepper, chopped cashews, curry, and nutmeg.
  5. Cook for 2 minutes longer, stirring constantly.
  6. Add drained pineapple chunks with 1/2 cup of syrup, water, and chicken bouillon cube. Reduce heat, cover, and cook for 4 minutes.
  7. Blend cornstarch with 2 tablespoons cold water.
  8. Stir the cornstarch mixture into the skillet.
  9. Cook, stirring rapidly until thickened.
  10. Serve with rice.
