Ingredients

  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup crushed pineapple
  • 2 eggs
  • 4 cups flour
  • 2 teaspoons soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup nuts (optional)
  • 1 cup shredded coconut

Instructions

  1. Cream shortening with white sugar and brown sugar until light and fluffy.
  2. Add crushed pineapple and mix well.
  3. Add beaten eggs and blend thoroughly.
  4. Sift together flour, soda, and salt.
  5. Gradually add the flour mixture and vanilla to the creamed mixture, mixing well.
  6. Stir in nuts (if using) and shredded coconut.
  7. Drop by teaspoonfuls onto a greased cookie sheet.
  8. Bake in a 350°F (175°C) oven for 10 to 12 minutes or until lightly browned.
