Pineapple-Coconut Drops

Ingredients

  • 1 1/4 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/4 c. butter or margarine
  • 1/4 c. shortening
  • 1/2 c. granulated sugar
  • 1/4 c. packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. coconut
  • 1/2 c. well-drained crushed pineapple
  • 1/2 c. chopped nuts

Instructions

  1. Combine flour, soda, salt and ginger; set aside.
  2. In large bowl, beat butter and shortening with electric mixer for 30 seconds.
  3. Add sugars and beat until fluffy.
  4. Add egg and vanilla; beat well.
  5. Add dry ingredients to beaten mixture; beat well. Stir in coconut, pineapple and nuts.
