Ingredients

  • 1/2 cup soft butter or margarine
  • 3/4 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1 large can crushed pineapple, drained
  • 1 egg, well beaten
  • 1 tablespoon margarine, melted
  • 1/2 teaspoon vanilla
  • 1 can coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, at medium speed, cream the butter with 1/4 cup of sugar.
  3. Beat in the flour to form a soft dough.
  4. Press the dough evenly on the bottom of a casserole dish and 1/2 inch up the sides.
  5. Bake until brown, about 15 minutes; then let cool.
  6. Spread crushed pineapple over the cooled crust.
  7. Add the remaining 1/2 cup sugar to the beaten egg.
  8. Mix in the melted margarine, vanilla, and coconut.
  9. Spread the coconut mixture over the pineapple layer.
  10. Bake at 350°F (175°C) for 20 minutes or until golden brown.
  11. Allow to cool, then cut into squares.
