Ingredients

  • 1 cup soft shortening
  • 1 1/2 cups sugar
  • 1 egg
  • 9 oz. can crushed pineapple with juice
  • 3 1/2 cups sifted flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped nuts

Instructions

  1. Mix thoroughly the shortening, sugar, and egg.
  2. Stir in the crushed pineapple with juice.
  3. Sift together the flour, soda, salt, and nutmeg, then stir into the mixture.
  4. Mix in the chopped nuts.
  5. Chill the dough for at least one hour.
  6. Drop rounded teaspoonfuls about 2 inches apart on a lightly greased baking sheet.
  7. Bake at 400°F (moderately hot oven) for 8 to 10 minutes, until no imprint remains when touched lightly with a finger.
