Pineapple Duckling

Ingredients

  • 3 lb. duckling, quartered
  • 1 (13 1/4 oz.) can pineapple chunks
  • 2 tsp. soy sauce
  • 1/8 tsp. ginger
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. butter
  • 1 onion, finely chopped
  • 1/2 green pepper, finely chopped
  • 2 Tbsp. cornstarch
  • 1/4 cup water

Instructions

  1. Remove excess fat from duckling and place in a shallow dish. Drain pineapple, saving juice.
  2. Combine pineapple juice, soy sauce, ginger, salt, and pepper.
  3. Pour mixture over duckling and marinate for 3 hours or more, turning occasionally.
  4. Remove duckling from marinade.
  5. Saute chopped onion and green pepper in butter until tender.
  6. Stir in the marinade and add the duckling pieces.
  7. Reduce heat to low and cover. Simmer for 1 hour.
  8. Remove duckling from the pan.
  9. Combine cornstarch and water to make a slurry. Stir into the pan and cook until gravy thickens.
  10. Serve hot with rice or noodles.
