Pineapple Icebox Dessert

A creamy, fruity pineapple icebox dessert layered with crushed wafers, whipped cream, and nuts, perfect for summer gatherings and family celebrations.

Ingredients

  • 1 lb. vanilla wafers, crushed
  • 1/2 lb. margarine
  • 1 box confectioners sugar
  • 4 eggs, beaten
  • 1 pt. whipping cream
  • 1 cup chopped nuts
  • 3 cups crushed pineapple

Instructions

  1. Line a 12 x 8 x 3-inch pan with half the wafer crumbs.
  2. Cream the butter and confectioners sugar well.
  3. Add the beaten eggs one at a time; mix well.
  4. Spread the batter over the wafer crumbs in the pan, sealing well to prevent pineapple juice from draining through.
  5. Drain the crushed pineapple and add it to the whipped cream.
  6. Spread the pineapple and cream mixture over the batter in the pan.
  7. Sprinkle chopped nuts over the cream layer.
  8. Top with remaining wafer crumbs.
  9. Let stand in the refrigerator for 24 hours, or at least overnight before serving.
