Ingredients

  • 1 1/2 cups cold water
  • 1 (3 oz.) package lime-flavored Jell-O gelatin dessert
  • 1 tablespoon lemon juice
  • 1 (8 oz.) package Philadelphia brand cream cheese softened
  • 2 (8 oz.) cans crushed pineapple drained, keep the juice
  • 1 1/2 cups miniature marshmallows
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Bring the water to a boil.
  2. Stir in lime-flavored gelatin until dissolved. Add remaining 1/2 cup water and lemon juice.
  3. Gradually add the gelatin mixture to the softened cream cheese and blend until smooth.
  4. Chill until the mixture thickens but is not set.
  5. Fold in drained crushed pineapple, miniature marshmallows, and chopped pecans if using.
  6. Pour the mixture into a 1-quart mold.
  7. Chill until the mold is firm.
  8. Unmold onto a serving plate and surround with lettuce.
