Ingredients

  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 small can crushed pineapple, drained
  • 1 teaspoon vanilla or lemon flavoring
  • 1 cup nuts
  • 1 teaspoon baking soda
  • 4 cups flour
  • Chopped maraschino cherries

Instructions

  1. Cream the shortening and sugars together.
  2. Add the well-beaten eggs and mix well.
  3. Stir in the drained, crushed pineapple, chopped maraschino cherries, and vanilla or lemon flavoring.
  4. Mix in the nuts.
  5. Gradually add the flour and baking soda mixture until well blended.
  6. Drop by teaspoonfuls onto a cookie sheet.
  7. Bake in a 350°F oven for about 12 minutes.
  8. Allow cookies to cool slightly before storing in an airtight container.
