Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1 cup pineapple (undrained)
  • 1/2 cup nuts
  • 1/2 cup dates
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups oats

Instructions

  1. Mix shortening, sugar, cinnamon, nutmeg, and egg until well combined.
  2. Cream the mixture and then add undrained pineapple.
  3. Sift together the dry ingredients: flour, salt, and baking soda, then add to the creamed mixture.
  4. Stir in nuts, dates, and oats until evenly incorporated.
  5. Drop spoonfuls of dough onto a greased cookie sheet.
  6. Bake at 375°F (190°C) for 12 to 15 minutes until golden brown.
