Ingredients

  • 1 lb vanilla wafers
  • 1/2 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 3 eggs
  • 1 small can crushed pineapple
  • 1/2 pint whipped cream

Instructions

  1. Roll vanilla wafers to fine crumbs.
  2. Divide the crumbs and put half in an 8 x 10-inch shallow pan; save the other half for the top.
  3. Cream the softened butter and powdered sugar together well.
  4. Add eggs one at a time, beating well after each addition.
  5. Pour the mixture over the crumbs in the pan.
  6. Drain juice from the crushed pineapple and spread the pineapple over the batter.
  7. Spread whipped cream over the pineapple.
  8. Sprinkle the remaining crumbs over the whipped cream and pat lightly into the top.
  9. Refrigerate for 12 hours before cutting and serving.
