Ingredients

  • 1 Tbsp. butter or margarine
  • 1 c. sliced scallions
  • 1/2 c. chopped walnuts
  • 1/2 c. raisins
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 3 c. cooked rice
  • 8 oz. can pineapple tidbits, drained

Instructions

  1. Heat butter in a large skillet over medium-high heat.
  2. Add sliced scallions, chopped walnuts, raisins, salt, and ground ginger.
  3. Cook, stirring for 4 to 5 minutes or until onions are tender.
  4. Add cooked rice and drained pineapple tidbits.
  5. Stir and heat thoroughly.
