Ingredients

  • 1/2 cup diced dried apricots
  • 1/2 cup chopped dates
  • 1 cup chopped walnuts
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 cup brown sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup maple syrup

Instructions

  1. Cover apricots with boiling water and let stand for 15 minutes, then drain and chop.
  2. Mix chopped apricots, chopped dates, and walnuts in a bowl.
  3. Sift together flour, baking powder, baking soda, and salt in a separate bowl.
  4. Add brown sugar and the dried fruit and nut mixture to the dry ingredients and mix well.
  5. In a small bowl, combine egg and milk, then add maple syrup and stir into the dry ingredients until just combined.
  6. Pour the batter into two well-greased 8 1/2 x 4 1/2-inch loaf pans.
  7. Let the batter stand for 15 to 20 minutes before baking.
  8. Preheat oven to 350°F (175°C) and bake the loaves for about 50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the bread on a wire rack before slicing and serving.
